My perspective on cooking oils changed after reading a Blog by Kris Bunner. An important part of a healthy diet is an appropriate ratio of Omega -6 to Omega-3 fats. The focus is not just on high Omega-3 fats, but also on maintaining a proper ratio of Omega 6 to Omega 3 fats in our diets. Cooking Oil is a very important source of Fats. Sunflowers are a plant that is easy and hard to screw up. The seeds are large. and just place them about an inch deep in loose soil. I would plant them about 6″ to 12″ apart and later thin them out to stand about 2′ from each other. Probably late in the Spring when the soil is warm is the best time to plant. If the soil is too cold they will not germinate. Also keep the soil moist but not soaking wet. They are spectacular for little effort. Sunflowers come in large sizes growing 8′ or more tall with flowers 12″ to 18″ in diameter. They also come in all sizes and multiple colors. Short ones can be used in the flower garden. Great for kids and when they mature, the birds will be there to harvest the seeds.

Firstly, there is no particular oil which could be termed as ‘the healthiest oil’. Each oil has its own merits and demerits. Oils can be classified under four categories as per their fat content: saturated, unsaturated, monounsaturated and polyunsaturated. Unsaturated oils are more beneficial and healthier. Saturated fat contains triglycerides (the component that affects your cholesterol levels) that could clog your arteries. Saturated oils however, are not your enemies. Coconut oil contains saturated fats, but is good for your hair and skin. Ghee also contains saturated fats but is beneficial if taken within limits. Other oils that contain saturated fats are palm oil and kernel oil. Monounsaturated fats and polyunsaturated fats are heart friendly as they contain good cholesterol or HDL (high density lipoprotein). Of the vegetable oils, monounsaturated oils work the best on cholesterol levels. Olive oil, peanut oil and mustard oils are monounsaturated oils.
